Breakfast for Lunch...

Today I was surprised when I went down to the dining for lunch to see that the omelet bar was still up and running.  Wanting to take advantage of this rare opportunity, I decided to make myself a protein packed sandwich.  Taking two pieces of sourdough toast, I spread hummus on one side and then drizzled some Sriracha hot sauce on top to give it a spicy kick.  At the omelet bar I had them make me an omelet with tomatoes, spinach and broccoli.  When it was ready I sandwiched it between my toast and sampled my breakfast sandwich.  It was delicious.  A combination of spicy hot sauce and creamy hummus along with the fluffy eggs and crispy toast made a sandwich I will definitely make again.

For those readers who are unaware of what Sriracha hot sauce is, it is a potent sauce made from chili peppers ground with garlic.  



Mango Madness...

For the past few days I had actually been craving mangos, so when I saw a chopped mango salad show up in the salad bar I knew I had to use it somehow.  I did not get too creative with this one, but simply added it to a sandwich of turkey and provolone cheese.  It brought a sweet taste to it that was unexpected. Little did I know that when I offered just one bite to my friend that I was forfeiting the whole second half, she enjoyed it that much!

Grannywich...

To give my sandwich a crisp and refreshing taste I decided to add some sliced granny smith apple to it today.  I first started with a piece of toasted sourdough bread, spread on some hummus, added swiss cheese and ham, and then topped with the apple.  I again left this sandwich open faced and even tried dipping it in some balsamic and oil.  It was exactly what I was looking for on this warm spring day.

Creative Quesadillas...

This post comes from my friend Sebastian who decided to create his own quesadillas one day.  Here he filled his own quesadillas with cheddar and monterrey cheese, onions and mushrooms.  Finishing it off with a drizzle of lemon juice and some sour cream and guacamole on the side, it makes the meal look absolutely delicious.

Sweet Sandwich...

For lunch today I decided to build a sandwich using some items from the salad bar. First though I asked for a piece of sourdough bread from the sandwich bar and toasted it. Then I spread on some hummus and then piled on some delicious sweet potato pieces they had as a chilled potato salad.  To give it a little protein I put a piece of ham on top and then finished it off with some crisp lettuce.  I decided to leave it open faced to keep it from being too bready.  Overall it was a great combination, with the sweetness of the sweet potatoes and the saltiness of the ham, it balanced out perfectly.

BBQ Blues...

Tonight I was craving BBQ, however to my dismay there wasn't any type of BBQ being served.  However, I knew this didn't have to mean the end.  I went to the burrito station and asked for some of the shredded chicken they put in the burritos and mixed it with some of the BBQ sauce from the condiment station.  Next, I went to the salad bar where I mixed in some red onion and crumbled blue cheese.  Finally, I brought everything over to the sandwich station where I asked them to wrap it in a whole grain wrap, add lettuce and grill it.  In the end I had delicious BBQ chicken wrap!
